La trattoria siciliana Buatta – Cucina Popolana was founded in 2015 in the historical centre of Palermo. A cuisine in which past and present meet, through the knowledge of tradition and the skill of the Michelin-starred chef, Fabio Cardilio: a Roman native and among the best interpreters – for over thirty years – of Palermo’s gastronomic culture.

At the Mercato Centrale Torino, Fabio Cardilio and his team conjure up all the flavours of Sicily, serving dishes that are traditional but at the same time original, enhanced by particular attention to the selection of raw ingredients and seasonality.

A journey through the flavours of Palermo’s popular cuisine that will offer, between the tables in the Piazza del Mercato, tastes of times gone by: from caciocavallo all’argentiera, via the traditional sfincione and caponata, continuing with the bucatini with sardines or baked anelletti, with a sweet cannolo and the unmissable cassata to finish.
