Because Joe Bastianich's workshop at the Mercato Centrale is full of knowledge, flavour and amazement.
Joe Bastianich offers a new version of the classic burger at the Mercato: the smashburger, a special technique of pressing the patty that caught on in the USA between the 1920s and the 1930s.
The patty – strictly handmade – is 100% Black Angus ground American meat that, thanks to its fat content, remains crispy on the outside but soft and juicy on the inside.
An iconic recipe, perfect to pair with sauces like the special, delicious Joe’s secret sauce (we bet you can’t work out all its ingredients!), the classic cheddar cheese, gherkins, or crispy onion. Don’t forget the fries: you can choose between classic and sweet potato fries at the stall!
The workshop’s other must-try dishes include the delicious, fragrant sous-vide fried chicken and ‘Made in Joe’ Bourbon whiskey bacon.
