Ingredienti di prima qualità proposti in schiacciate espresse, bianche o integrali. Un modo tutto fiorentino di gustare i sapori del territorio al Mercato.

The products offered by Massimiliano Parri, a serial gourmet, focus entirely on taste and quality, drawing on quality products from small Tuscan companies and allowing you to appreciate their raw ingredients by getting to know the individual producers closely.

Filled with carefully-selected ingredients, Parri’s schiacciata is offered in two versions: white with the addition of ancient flours, and wholemeal. The menu is curated by the artisan himself with the help of chefs Damiano Attucci and Andrea Venzo, and includes a dozen options that are updated based on seasonality and products available at the market.

Massimiliano assembles them and also enjoys filling them with the “frittatina of the day”, prepared on the spot, with local rustic salad, or with succulent slices of English-style roast beef (rosbiffe, as it is described on the Tuscan menu!) with meat from sustainable farms, plant-based mayonnaise flavoured with mustard and honey and good-quality artichokes in oil. The menu also offers sweet options: schiacciate stuffed with mascarpone cream flavoured with vin santo, cantucci crumbs, chestnut, chocolate or pistachio cream.
