For Arcangelo Dandini, frying represents tradition, selection, and mastery. In his shop, the supplì is more than a simple street food – it’s an institution.

Arcangelo Dandini perfectly embodies the figure of the artisan: a native Roman and descendant of the Castelli family, he carries on the history and tradition of the Roman cuisine. He is the fourth generation of a great lineage of Roman restaurateurs who have always been dedicated to good food and tradition.

Dandini strives to express his passion for the flavors of his childhood, for the Roman tradition, and, most importantly, for the supplì, considered the street food par excellence. To pay homage to the frying shops, which were historic places in the streets of Ancient Rome, and to awaken the old habits of the Romans, Arcangelo Dandini decided to open Supplizio, a gourmet frying shop in the heart of Rome. The product that best represents the shop is the Roman-style rice supplì with chicken giblets. For his supplì, Dandini uses only aged Carnaroli rice from the Novara rice mills, artisanal breading from an antique Roman wood-burning oven and fior di latte from Agerola. The frying is, of course, done on the spot.
