With his boutique Le Specialità Peruviane, Christopher Abarca Suarez is ready to take you on a true voyage of the tastebuds, through every region of Peru from the coast to the Amazon rainforest, from the sierra to the Andes. Peruvian cuisine has thousands of years of history behind it, millennia of flavors and colors which make it invariably, yet variedly, delicious. “Kay” is the word in Quechua, the official language of the Inca empire, that means essence: it is also the watchword of this alternative Peruvian cooking project, which emphasizes tradition but revisits it in a modern key, making it more familiar to the local palate without ever compromising its identity. The most traditional dish that the boutique serves are the empanadas, where local ingredients blend with imported Peruvian produce, all meticulously chosen in order to ensure the highest quality.

In the boutique: chicken empanadas; causa, potato cake in a sauce of yellow chili, salt and lime, accompanied by an avocado cream and sautéed prawns; arroz chaufa, sautéed rice, peppers, zucchini and crispy chicken.
