Giacomo Trapani prepares traditional Florentine dishes, which also happen to be his family recipes. Not to be missed is the lampredotto: the undisputed king of Florentine street food, eaten either in the classic rosetta bun and seasoned with the unmissable green sauce, or directly from a plate. Other stand-out dishes include the Florentine tripe, the bollito – revisited also as meatballs or following the Tuscan “francesina” recipe -, cheek stracotto, peposo, and the Tuscan soups of ribollita and pappa al pomodoro. The deliciousness of each proposal is enhanced by the quality of the products, which is greatly due to the short supply chain. Although he is a seller, Giacomo is first and foremost a producer. He is an expert in raw materials and only selects ingredients of impeccable quality – the difference can be tasted in every bite.
