Butter and Cheese – from the Langhe to the alpine pastures

For Beppino Occelli, memory is important. And at his store, the aromas and flavours of his products evoke memories.
Beppino Occelli learned about the Langhe through stories told by its inhabitants, reconstructing the rural recipes and creating a veritable cheese village in Valcasotto, where some cheeses are left to age for years. This method is made unique by the selection of 12 essences of trees that are perfect for the aging process and the creation of micro-cellars that bring out the best of each cheese. It all began in the 1970s with Occelli’s butter production, which has always been done by hand in wooden vats and is today considered amongst the best in the world. His secret? Research, development, passion and the natural potential of the Langhe, which, as Beppino likes to say, is a territory rich in buonezza.

Available at his store: the famous Occelli butter – made with strictly Italian churned sweet cream – shaped by hand, Occelli Robiola, Losa, Tuma del Trifulau with summer truffle, Tuma d’Feja, Tuma dla Paja, Verzin di vacca, Verzin di capra, the Cusiè varieties and the Occelli varieties; some are refined with Barolo wine, spring hay, barley malt and whisky or fruit and Muscat grappa. Lastly, the store offers the rare Escarun, a truly unique cheese.
