For the rotisserie, the chicken is marinated in a typical Tuscan brine of herbs and spices and then cooked over a wood fire, guaranteeing a constant hot and dry environment. At the Mercato Centrale Torino, other smoked products are available, slow-cooked at a low temperature, allowing the aromas of the woodfire to enrich the meat, which results in a strong and unforgettable flavor.
