The Mediterranean diet thus embraces Japanese culture in Donato Scardi’s dishes, made with ingredients native to Japanese tradition, like nori and kombu seaweed, soy sauce, wasabi, pink ginger and tataki sauce, and ingredients from Italy like fish and vegetables.
