Carmelo knows this well, and with Arà, he offers original recipes found in Sicilian tradition, creating deliciousness without artifice, only selected ingredients blended with an alchemist’s skill. The confectionery specialties made in Pannocchietti’s shop have distant origins and are rooted in Modica’s patisserie tradition, reproducing and enhancing the best that was created and shared in Sicilian kitchens by the nuns who invented the recipes and the Monsù, French cooks who were considered refined and unbeatable. This is how the savoury specialties came to be – like the different flavours of arancini – and the desserts, including cannoli, almond paste from Val di Noto and cassata with ricotta made using Giarratana sheep’s milk, garnished with candied fruit at organic farms and the biodynamic company founded by Arà.
