For Beppe Giovale, cheese is perfume, pasture. It’smilk, taken from Piedmont mountain pastures where goats, sheep and cows graze in the open air.
The natural diet and the absence of heat treatment maintains the organoleptic properties and flavour of the cheese. At Mercato, Beppe offers dairy products and raw milk cheeses from grazing animals, both homemade and processed. Among the homemade cheeses, the Giallina and Robiola stand out for their texture and flavour. But that’s not all. Giovale also offers mixed tasting boards and cones. Every dish integrally adheres to artisan principles, agricultural-pastoral honesty, social balance and good taste.
