It’s here that she learnt the nuances of culinary traditions, starting from Tuscan cuisine and including the traditions of Campania and Zurich. Valerie’s recipes are both sweet and savory, fried the same way and equally delicious. Over the years, Valerie has refined and perfected this technique through new experiences. During her travels in search of new flavours, she never neglected to bring her grandma’s recipes with her, respecting tradition but also trying to modernize it, with a thought for health and an unfailing curiosity towards new tastes. The end result are the specialties that Valerie brings to Mercato Centrale Firenze: fried tripe, polpette with tripe and lampredotto, fried rabbit, chicken and vegetables, savory fritters, polenta and fried custard.
