Now he’s one of the standard bearers of artisanal Japanese cooking in Florence. His concept for Mercato Centrale is a simple one: high-quality dishes that observe the hallmarks of every ingredient. A focus on the flavours begins as he cooks the rice, selects and cuts fish, and ends in the preparation of all his specialities.
