Delicious, prized, Mediterranean: it’s the fresh fish selected by Paola Rosellini and Maurizio Spadini, artisan fishmongers for generations.
It’s the reason they have such high standards. They choose their catch and suppliers with care and attentiveness: their counter is a triumph of fine white fish – including sea bass, sea bream, scorpion fish, hake, grouper – and tasty oily fish, from tuna to anchovies to mackerel. There is no shortage of crustaceans, from mantis shrimp to red prawns and lobsters. With the exception of fish species that aren’t found in our seas, everything always comes from the Mediterranean. The preference is obvious: first the Tuscan archipelago and then the Tyrrhenian Sea, followed by the Adriatic and the Ionian. The fish on Rosellini’s counter are always seasonal and arrive fresh daily, directly from the Viareggio market. It was Paola Rosellini’s great-grandparents who started the business, first as street vendors with a basket and a bicycle, bringing produce caught in the Padule to the streets in town, before opening their first store in Montecatini Terme. Paola Rosellini and Maurizio Spadini sell fresh fish, as well as semi-prepared products, ready to be thrown into the pot, including tuna and mullet bottarga, smoked fish and ready-to-eat dishes at Mercato Centrale Firenze, dishes with a taste of the sea.
