The result is a firm and compact meat that is marinated in a brine of aromatic Tuscan herbs and spices and then cooked in the rotisserie using only charcoal and wood. A slow, steady and dry cooking that makes the chicken tasty, fragrant and crisp. At Mercato, Enrico makes wings, kebabs, skewers – all with chicken – as well as whole chicken, of course, not just to be enjoyed on Sundays, but every day!
