From fried food to dairy products, his is a passion for cooking and cuisine in all its forms, especially in the sharing, enjoyment and pleasure of food. For his small shop in Florence, he chooses every product with great care, dedicating attention to everything from the nutrition and rearing of the buffaloes – reared free-range and fed with wheat from the same farm they live on – to the preparation of the final product. The result of this work can be found in his shop, where the buffalo mozzarella comes strictly from Campana. The shop’s specialities include buffalo mozzarella in a salad with red tomatoes and yellow cherry tomatoes, aubergine parmigiana and stuffed courgette flowers filled with mozzarella and anchovies in the typical Roman style. And we can’t forget the Neapolitan ‘mozzarella in carrozza’, a fried mozzarella sandwich and the ultimate guilty pleasure.
